Instructor: Eric M. Knight and Stacy M. Coplin are co-authors of Foraging Texas: Finding, Identifying, and Preparing Wild Foods in Texas. They run Local Leaf LLC, where they sustainably wild-harvest, process, and sell Yaupon Matcha. Eric is an environmental engineer and teaches edible/medicinal plant classes.
